Healthy Christmas Party Canapé Recipe

The Party season is well and truly upon us, and for those of you who want simple, delicious, visually beautiful canapés to serve that are also healthy, look no further than the delectable ‘Roots Fantasy’ creation from KX Head Chef Alessandro.

Ingredients: For 10 Canapés

1 Beetroots
1 Parsnip
1 Sweet potatoe
pinch Black pepper
pinch Maldon sea salt
handful Sakura herbs

Method:

Skin the sweet potatoes, parsnip and beetroots and cut them into slices of about 8mm.

Poach the sweet potatoes and beetroots for about 7 minutes and parsnips for about 3 minutes, cool them in ice-water, rinse and add a touch of rock salt and black pepper.

Seat the slice of roots one in the top of other one and garnish with sakura herbs.
